Composition: These are durum wheat semolina pici (not egg pici, as the most authentic Sienese recipe calls for), selected from small artisan pasta makers in the area that use local grains.

Format: Typically sold in 500g packages, they are presented as “spaghettoni” dried at a low temperature. This slow process keeps the organoleptic properties of the grain intact and provides the rough texture needed to hold the sauce.

Price: In the store and on the online shop, the cost is around โฌ4.50 per pack, an honest price for a product from a controlled supply chain.

The dry artisanal pici you find in the store have a very firm texture. When cooking them, be sure to use plenty of water and don’t be in a hurry: the cooking time may vary but remain generous to allow the heart of the spaghetti to cook evenly without losing its “al dente” texture.
