Description
The Grattamacco 2021 Bolgheri Superiore DOC is one of the ultimate expressions of this historic, classic vintage on the Tuscan coast. Unlike many other great Bordeaux blends of the area, Grattamacco stays true to tradition by incorporating a percentage of Sangiovese, which infuses the wine with a vibrant freshness and a soul deeply rooted in the terroir.
Technical Sheet
-
Blend: 65% Cabernet Sauvignon, 20% Merlot, 15% Sangiovese.
-
Production Philosophy: Certified Organic farming.
-
Terroir: Vineyards averaged at 25 years old, situated between 100 and 200 meters above sea level on sheltered hills. The soil is characterized by white clay mixed with calcareous-marly flysch and quartz sandstone.
-
Winemaking & Aging: Spontaneous fermentation using indigenous yeasts in open oak vats with frequent manual punching down (follature). This is followed by 18 months of aging in barriques (both new and second-use) and further refinement in the bottle.
-
Alcohol Content: 14.5% Vol.
Tasting Notes & Organoleptic Profile
-
Appearance: Bright, deep ruby red with subtle purple highlights.
-
Nose: Broad, aristocratic, and immensely refined. It opens with intense notes of wild black fruits, cassis, plum, and pomegranate, before evolving into complex balsamic and Mediterranean scrub aromas (rosemary, sage). The finish reveals elegant hints of tobacco, coffee beans, graphite, and a perfectly integrated touch of oak.
-
Palate: The entry is austere, powerful, and opulent, yet beautifully supported by a remarkable mentholated freshness and mineral sapidity (a legacy of the saline terroir). The tannins are dense, silky, and enveloping. The finish is incredibly long, persistent, and savory, with a distinct iron-like edge.
Food Pairings
A structured and full-bodied wine of great pedigree, it pairs beautifully with:
-
Wild game dishes (wild boar stew, venison).
-
Rich roasts, stews, and grilled red meats (ideal with a Chianina beef fillet).
-
Mature, aged, and flavorful cheeses.

Serving Suggestion: Serve at 16-18°C (60-64°F) in large, wide-bowled glasses (Bordeaux/Ballon style). Decanting or opening the bottle at least 1-2 hours before serving is highly recommended to allow the bouquet to fully open. It possesses an extraordinary aging potential, estimated well beyond 2043+.
