Description
Crostino toscano is a traditional Tuscan appetizer made with toasted bread topped with a warm and flavorful chicken liver pâté.
The traditional spread is slowly cooked with:
- chicken livers,
- onion, celery, and carrot,
- capers and anchovies,
- white wine or Vin Santo,
- broth,
- and sometimes a small amount of spleen or minced meat to enrich the flavor.
The mixture is finely chopped until it reaches a creamy yet rustic texture, then spread over toasted Tuscan bread. It is usually served warm as a starter in trattorias across Toscana.
Its flavor is rich, intense, and slightly aromatic, balancing the sweetness of sautéed vegetables with the savory notes of anchovies and capers. Traditionally, it pairs well with Tuscan red wines such as Chianti.
