Sugo all’Aglione is the Val di Chiana‘s signature condiment, a simple but extraordinarily aromatic tomato sauce based on a unique ingredient: theVal di Chiana Aglione. It is not a common “larger” garlic, but a distinct botanical variety(Allium ampeloprasum var. holmense):
