Ragù di Chianina is the noble condiment of Tuscan cuisine, prepared exclusively with veal from the Chianina IGP breed, the oldest and most impressive breed of cattle in the world, originally from the Val di Chiana. Unlike mixed or more common ragùs, pure Chianina ragù is distinguished by the superior quality of the raw material:
