If you are looking at Aceto saba giusti, you are essentially looking at a piece of Italian culinary history. Giuseppe Giusti is the oldest balsamic vinegar producer in the world (founded in 1605), and their Saba is one of their most traditional products.

What is Saba?

Unlike Aceto Balsamico, Saba is not a vinegar because it isn’t fermented or aged to the point of acetification. It is “cooked must”—the unfermented juice of grapes (usually Trebbiano and Lambrusco) that is reduced over a direct flame for nearly 72 hours.

The result is a thick, sweet, and non-acidic syrup that tastes of caramelized fruit, raisins, and figs.
