Description
Cocoa Panforte (often called Black or Chocolate Panforte ) is the more intense and spicy soul of the typical Sienese dessert. It is distinguished from the “Margherita” version by a stronger character and a deep brown color.
Here are its main features:
-
The Taste: A perfect balance between the sweetness of honey, the bitterness of extra dark cocoa and the warmth of a rich mix of spices (cinnamon, nutmeg, cloves and pepper).
-
The Consistency: Dense, chewy and rich in contrasts thanks to toasted whole almonds and candied fruit (orange and citron, sometimes melon).
-
Appearance: It appears as a low, compact disk. Unlike the classic dusted with powdered sugar, the cocoa version may have a coating of cocoa powder or a thin chocolate glaze.
-
Pairing: It is traditionally enjoyed at the end of a meal with a glass of Vin Santo or espresso coffee, which enhances its roasted notes.
It is the perfect dessert for those seeking a more modern and “chocolaty” variation of Siena’s centuries-old medieval tradition.
