Description

Cavallucci are among the oldest and most representative traditional Sienese sweets, typical of the Christmas season but now appreciated all year round.

Here is a brief sketch of these cookies:

  • Appearance: They have an irregular, rounded shape, similar to a small nugget. The surface is opaque and sprinkled with flour, which gives them a rustic, “old-fashioned” appearance.

  • Consistency: These are firm, firm cookies that are almost hard in the bite but melt nicely in the mouth (especially when dipped).

  • Ingredients and Flavor: They contain no eggs or butter. The heart of the flavor comes from a spicy mix of anise, walnuts, candied fruit (orange and citron) and cinnamon, all blended with a syrup of sugar and honey.

  • Trivia: The name probably comes from the fact that they were offered at post stations to horse drivers, or because the outline of a small horse was imprinted on the cookie in ancient times.

Local tip: The best way to enjoy them? Accompanied by a glass of Vin Santo, letting them soak for a few seconds to soften the dough and release the aroma of the spices.
