Description
Olio DOP Chianti Classico “Frantoio di Vertine” is the jewel in the crown of Gonnelli 1585’s Grand Cru line. It is produced at the oil mill of the same name located in Gaiole in Chianti, in the technological and geographical heart of the appellation.
If the Laudemio is Florentine elegance and the Piazza del Palio is Tuscan balance, the Frantoio di Vertine is the mineral and woody power of Sienese Chianti.
Characteristics of Grand Cru:
-
Certification: DOP Chianti Classico. This is a closed supply chain oil: the olives are grown, harvested and pressed exclusively within the borders of Chianti Classico.
-
Varieties: Frantoio, Correggiolo and other local native varieties.
-
Sensory Profile:
-
Nose: Very intense. Green fruitiness dominates with clear vegetal notes of wild herbs, tomato leaf and thistle.
-
Palate: This is an oil with great structure. It has a fresh flavor of freshly pressed olives, with a definite bitterness and a persistent and harmonious spiciness, typical of the marl soils of Chianti.
-
-
Color: Intense emerald green with golden highlights.
-
Technology: It is cold-extracted in the absence of oxygen (under nitrogen) to preserve the fragrances and very high polyphenol content intact.
Recommended pairings:
Given its strong personality, it requires dishes of character that can hold their own:
-
Red Meat: The perfect companion for Chianina (tagliata or fiorentina).
-
Structured Soups: Ideal on bread soups, spelt soups or intense legume soups.
-
Cheese: Pairs beautifully with aged pecorino or hard cheeses.
-
Vegetables: Excellent on grilled vegetables and seasonal dips.
It is considered a “meditation” oil for enthusiasts, perfect for those who love strong taste sensations and the typical “grit” of Tuscan high hill oils.
