Description
Piazza del Palio Extra Virgin Olive Oil is one of the flagship selections of the historic Gonnelli 1585 company . It is a Tuscan IGP-certified oil that aims to encapsulate the authentic identity of the region in a bottle.
Compared to Laudemio (which is the extreme top of the range), Piazza del Palio is an oil designed for those seeking classic Tuscan character with impeccable balance.
Main features:
-
Certification: IGP Toscano (Protected Geographical Indication), which guarantees that every step, from harvesting to bottling, takes place strictly in Tuscany.
-
Olive Varieties (Cultivars): Mainly Frantoio, Moraiolo and Correggiolo.
-
Sensory Profile: * On the nose: A medium fruitiness with fresh notes reminiscent of cut grass and hints typical of the Tuscan countryside.
-
Palate: Extremely balanced. It has the characteristic bitter and spicy notes typical of high quality oils, with a final aftertaste reminiscent of artichoke.
-
-
Color: Deep and bright green.
-
Processing: The olives are cold pressed at the Santa Téa Oil Mill (Reggello) within a few hours of harvesting, often in the absence of oxygen to preserve the fragrances and polyphenols.
Usage Tips and Pairings:
It is a versatile oil that does not “cover” flavors but enhances them. It is at its best on:
-
Soups and Minestros: Excellent on ribollita or bean soup.
-
Meats: Excellent on cuts and game.
-
Dishes of Tradition: The classic bruschetta (or “fettunta”) to feel the full force of the harvest.
While the Laudemio is almost a “perfume” to be sipped, the Piazza del Palio is the ideal companion for those who want to bring Tuscan excellence to the daily table with a touch of elegance.
